While my little sister and my mother were in town, we took a long weekend trip to DC. My good friend, Ryan, lives just outside of DC with his little family and opened his house to us.
Of course, I couldn’t show up empty handed and since we had just picked some amazing strawberries I decided that Chocolate Covered Strawberries would be the perfect hostess gift!
I picked the biggest, plumpest, juiciest, most gorgeous strawberries I could find out of our box of strawberries. I dipped those strawberries in a lovely chocolate glaze and dried them on a piece of wax paper. After they dried on the wax paper I put them in the fridge to get the chocolate cold and crispy.
This recipe will make quite a bit of glaze. Place the rest of the glaze in a freeze proof container and place in the freezer. Whenever you want to make more chocolate covered strawberries, or chocolate covered whatever, microwave until the chocolate is smoothe and melted. Trust me, it sounds silly but having a small container of chocolate glaze in the freezer can be a life-saver. Whenever you may be in a pinch and need a quick & cheap gift, whether a hostess gift or gift exchange gift, this glaze comes in handy! Everyone likes things that are dipped in chocolate!

Chocolate Covered Strawberries
6 oz premium dark or extra dark chocolate, chopped
1 stick unsalted butter
1 tablespoon light corn syrup
Splash of liqueur of choice, optional (grand marnier, spiced rum, kahlua, etc.)
Pinch of sea salt
Place the chocolate, butter and corn syrup in a medium heatproof bowl. Heat in the microwave at 30 second increments. Every 30 seconds, stir the mixture using a rubber spatula until melted and smooth. Stir in liqueur and salt.
Dip your strawberries in the glaze and place on a piece of wax paper to cool and harden.
